Preserving Herbs: Create Your Very Own Herbal Salt

Your fresh herbs are thriving in your back yard? Put them to use! There are a lot of ways how to use and how to preserve herbs. Creating your very own herbal salts is just one of them.
  • Be  creative – design your own blend
           It's up to you which herbs you use. Follow your taste buds!
  • Decide yourself on best herb-salt-ratio
           Less salt means more flavor (and better heart health). Use more salt to preserve longer.
  • Be careful seasoning with herb salt: it’s still salt!
  • Try Mediterranean sea salt – it has more minerals and adds to the flavor.
Here are 2 basic recipes - using more or less salt. Read on to learn more.

Herbal Salt (1) - Recipe with less salt

3 loosely-packed cups of fresh herbs – which ever you like –
1/2 cup salt (coarse like sea salt is better)

Place the herbs and salt in a food processor and pulse until herbs and salt are well blended.

Place the herb mixture in a glass jar, and put in the fridge for 7-14 days to let the flavors meld. Give it a shake every day or so.

Store in the fridge. The salt in this recipe acts as a preservative, so your herbs should last 6 months, or even longer.

¼ cup of fresh herbs (firmly packed ) – which ever you like, 1 cup salt. Place the herbs and salt in a blender. Blend until herbs are well incorporated with salt.

Spread herb salt in a single layer on parchment paper , cover with cheese cloth or kitchen towel and let dry for about 1 day. When dry, put back into blender and give it another  quick blend.

Store in glass jar with tight lit in dry and cool place. This  herb salt should last more than 6 months.
