Mix salad greens and herbs as you like it. Make sure you include ‘bitters’ like Belgian Endive, Radicchio, and Dandelion. If you are not able to find fresh Dandelion leaves, go for dried crushed leaves.

Ingredients:

  • ¾ cup olive oil
  • ¼ cup red wine vinegar
  • 1 Tbsp chopped fresh herbs (parsley, basil)
  • ½ tsp dried herbs (mix to your own taste: thyme, marjoram, oregano, sage, rosemary)
  • salt and freshly ground black pepper to taste

Vinaigrette Recipe

Store bought salad dressing can be convenient but it often contains too much salt and sugar, and it comes with chemical additives. Making your own is simple. Add all flavors you like. You may even store it for some time in a jar in your refrigerator.

Basics:

(1) magic ratio of oil to vinegar is 3 parts oil to 1 part vinegar

(2) Shake all ingredients together in a tightly-lidded container or whisk together in a small bowl.

(3) Let stand 10 minutes to rehydrate dried herbs and blend flavors.

(4) Shake again, and then dress salad as desired or store in a tight-lid container/jar for a few days – don’t forget to shake again before use.
